The Science of Fat

This is a fascinating article in Outside Magazine on fat and muscle.

Not everything about fat is bad, of course. Fat tissue under the skin, known as subcutaneous fat—the kind that makes young people look succulent and ripe—is essentially padding that protects the body from injury, and it also helps fight infection and heal wounds. “Sub-q” fat produces an important hormone called adiponectin, which appears to help control metabolism and protect against certain cancers, notably breast cancer.

The bad news is that, as we age, we gradually lose this good fat, which is one reason why our hands get bonier. Instead, men and women alike tend to build up blobby fat on our midsections. Over the past decade or so, Kirkland and other scientists have discovered that this so-called visceral fat infiltrates our vital organs, bathing them in a nasty chemical stew that wreaks havoc in the body. Visceral fat produces an array of cell-signaling proteins called cytokines, including interleukin-6 (IL-6), which causes chronic inflammation, and TNF-alpha, for tumor necrosis factor, which has been linked to cancer.

Kirkland and other researchers have come to believe that, in addition to the problems associated with diabetes and heart disease, fat may actually help accelerate the aging process. In a 2008 experiment, scientists at the Albert Einstein College of Medicine at Yeshiva University surgically removed abdominal fat from obese lab rats and found that the rodents lived significantly longer than their chubby cousins. In a more recent study, not yet published, the Einstein team found that surgical fat removal prevented some colorectal cancers in mice that were genetically predisposed to those tumors.

I had no idea there was such a system in place in the human body:

One newly discovered myokine even tries to convert fat itself into an energy-consuming system like muscle. In 2012, a Harvard-based team identified a hormone called irisin, secreted during exercise, that tricks plain, blobby, “white” fat—and even deep visceral fat—into acting like “brown” fat, a far less common form that is dense with mitochondria and burns energy just like muscle does. Bruce Spiegelman, the Harvard scientist who led the team that discovered irisin, is now looking for a drug compound that might trigger its release.

On the Oral History of Pulp Fiction

Mark Seal, writing for Vanity Fair, profiles the oral history of Pulp Fiction (which I consider to be the best film Quentin Tarantino has made/directed):

Made for $8.5 million, it earned $214 million worldwide, making it the top-grossing independent film at the time. Roger Ebert called it “the most influential” movie of the 1990s, “so well-written in a scruffy, fanzine way that you want to rub noses in it—the noses of those zombie writers who take ‘screenwriting’ classes that teach them the formulas for ‘hit films.’ ”

Pulp Fiction resuscitated the career of John Travolta, made stars of Samuel L. Jackson and Uma Thurman, gave Bruce Willis new muscle at the box office, and turned Harvey and Bob Weinstein, of Miramax, into giants of independent cinema. Harvey calls it “the first independent movie that broke all the rules. It set a new dial on the movie clock.”

I enjoyed this paragraph on the naming of Pulp Fiction:

“Like a lot of guys who had never made films before, I was always trying to figure out how to scam my way into a feature,” Tarantino tells me. Though he was indisputably king of all movie knowledge at Video Archives, the suburban-L.A. store where he worked, in Hollywood he was a nobody. Surrounded by videos, which he watched incessantly, he hit upon an idea for recycling three of the oldest bromides in the book: “The ones you’ve seen a zillion times—the boxer who’s supposed to throw a fight and doesn’t, the Mob guy who’s supposed to take the boss’s wife out for the evening, the two hit men who come and kill these guys.” It would be “an omnibus thing,” a collection of three caper films, similar to stories by such writers as Raymond Chandler and Dashiell Hammett in 1920s and 1930s pulp magazines. “That is why I called it Pulp Fiction,” says Tarantino.

Oscar Pistorius, the Risk Taker

This week, Oscar Pistorius was accused of premeditated murder of his girlfriend Reeva Steenkamp by South Africa prosecutors. It’s a sad story all around.

I went back and read this piece in New York Times Magazine, profiling the Blade Runner. It was published in January 2012, as Oscar was training for the 2012 London Olympics. Michael Sokolove, who spent time with Oscar Pistorius, exposed Oscar’s risk-friendly nature:

Hanging out with Pistorius can be a great deal of fun. You also quickly understand that he is more than a little crazy. I asked him about the tattoo on his left shoulder, a Bible verse from Corinthians that begins, “I do not run like a man running aimlessly.” He said he got it on a visit to New York. He was staying at a hotel in SoHo, and couldn’t sleep, so he took the subway uptown and just walked around. “I went into an all-night tattoo parlor,” he said. “Some Puerto Rican guy did it. It took from 2 a.m. to about 8:30. I think he was falling asleep after a while, which is why it’s a little squiggly at the bottom. But I like it that way. To me, it makes it look more authentic.”

In 2008, Pistorius crashed his boat into a submerged pier on a river south of Johannesburg. His face and body hit the steering wheel, and he broke two ribs, his jaw and an eye socket. Doctors had to sew 172 stitches in his face. More recently, while riding his dirt bike through tall grass, he clipped a fence and turned around to see one of his prosthetic legs swinging from a section of barbed wire, an unwelcome sight, for sure, but less dire than if it had been a biological leg. It was one of the only times that it occurred to him that having prosthetic lower limbs may confer some advantage.

The people around Pistorius worry about his risk-taking, but there’s only so much they can do. His manager, Peet van Zyl, shrugged when I asked him about it. “It’s the nature of the man,” he said. “At least we did get the motorbike away from him.”

There’s also this:

He bought two African white tigers and boarded them at a game reserve, then sold them to a zoo in Canada when they grew to about 400 pounds and he was no longer comfortable visiting with them. “They were really beautiful, but they started to get a little big for me,” he explained.

And finally, an interaction between the author and Pistorius on guns:

I asked what kind of gun he owned, which he seemed to take as an indication of my broader interest in firearms. I had to tell him I didn’t own any. “But you’ve shot one, right?” Actually, I hadn’t. Suddenly, I felt like one of those characters in a movie who must be schooled on how to be more manly.

“We should go to the range,” he said. He fetched his 9-millimeter handgun and two boxes of ammunition. We got back in the car and drove to a nearby firing range, where he instructed me on proper technique. Pistorius was a good coach. A couple of my shots got close to the bull’s-eye, which delighted him. “Maybe you should do this more,” he said. “If you practiced, I think you could be pretty deadly.” I asked him how often he came to the range. “Just sometimes when I can’t sleep,” he said.

The Unfair San Francisco Housing and Rental Market

Writing in the London Review of Books, Rebecca Solnit expresses her discontent at the unstable housing market in San Francisco, driven by new money from the tech boom (Google, Facebook, etc.):

At the actual open houses, dozens of people who looked like students would show up with chequebooks and sheaves of resumés and other documents and pack the house, literally: it was like a cross between being at a rock concert without a band and the Hotel Rwanda. There were rumours that these young people were starting bidding wars, offering a year’s rent in advance, offering far more than was being asked. These rumours were confirmed. Evictions went back up the way they did during the dot-com bubble. Most renters have considerable protection from both rent hikes and evictions in San Francisco, but there are ways around the latter, ways that often lead to pitched legal battles, and sometimes illegal ones. Owners have the right to evict a tenant to occupy the apartment itself (a right often abused; an evicted friend of mine found a new home next door to his former landlord and is watching with an eagle eye to see if the guy really dwells there for the requisite three years). Statewide, the Ellis Act allows landlords to evict all tenants and remove the property from the rental market, a manoeuvre often deployed to convert a property to flats for sale. As for rent control, it makes many landlords restless with stable tenants, since you can charge anything you like on a vacant apartment – and they do.

A Latino who has been an important cultural figure for forty years is being evicted while his wife undergoes chemotherapy. One of San Francisco’s most distinguished poets, a recent candidate for the city’s poet laureate, is being evicted after 35 years in his apartment and his whole adult life here: whether he will claw his way onto a much humbler perch or be exiled to another town remains to be seen, as does the fate of a city that poets can’t afford. His building, full of renters for most or all of the past century, including a notable documentary filmmaker, will be turned into flats for sale. A few miles away, friends of friends were evicted after twenty years in their home by two Google attorneys, a gay couple who moved into two separate units in order to maximise their owner-move-in rights. Rental prices rose between 10 and 135 per cent over the past year in San Francisco’s various neighbourhoods, though thanks to rent control a lot of San Franciscans were paying far below market rates even before the boom – which makes adjusting to the new market rate even harder. Two much-loved used bookstores are also being evicted by landlords looking for more money; 16 restaurants opened last year in their vicinity. On the waterfront, Larry Ellison, the owner of Oracle and the world’s sixth richest man, has been allowed to take control of three city piers for 75 years in return for fixing them up in time for the 2013 America’s Cup; he will evict dozens of small waterfront businesses as part of the deal.

Evictions, foreclosures, and legal loopholes. This doesn’t sound like a city I’d want to inhabit. A must-read for perspective.

Traversing Provence by Foot

In a blog post titled “Pilgrims in Provence,” Matt Goulding realizes his dream of vising Provence, France.

My first dreams of Provence came as a teenager, when I stumbled across a picture of a local market in one of my mom’s glossy magazines. The village was tiny and cobblestoned, dappled with a gentle light so perfect it looked like it had been painted onto the page. Everything in that picture seemed impossibly vivid: the Technicolor tomatoes and eggplants, the farmers with dirt still crusted on their fingers, the cafe on the side of the plaza with the chalkboard menu listing untold treasures du jour.

That picture drove me wild with wanderlust. I wanted to be there to smell those tomatoes, to pepper those farmers with questions, to wander back to a small country house with nothing but a dog-eared journal and an armful of ingredients. I’ve been carrying those images around in my head for the better part of two decades, waiting for the day when I could transpose them on to reality.

All of this sounds warm and fuzzy and ripe for disappointment, but the great majority of Provencal cliches exist primarily because it is exactly that fairy-tale region you imagine it to be. To paraphrase Bourdain, it’s what Martha Stewart sees when she closes her eyes.

Having spent some time in Provence (mostly in Avignon) a few years ago, this description is apt:

Avignon is the kind of town that brings Provence’s virtues into sharp focus: the old part of town, circumscribed by an ancient city wall, is home to leafy avenues, a sprawling central market housing the building blocks for historic feasts, and the types of cafés you’d sacrifice unspeakable things to have in your neighborhood back home.

On navigation:

No, your best friends in this mysterious new world are the maps you procure from the local Tabacs shops (or from excitable outdoorsmen in Avignon) and the colored lines that mark the trails at every turn: red and white for the GR 6, our path for much of our time in the Luberon, red and yellow for the long-distance GRP trail, and so on. It takes a bit of getting used to, but soon you learn that an x means you’re going the wrong way, that a 90-degree angle indicates an imminent turn, and that the absence of any color at all for more than, say, 100 meters means you’ve gone rogue.

A convincing paragraph on why it’s better to travel on foot than by car/bus:

Maybe it’s the rosé talking, but there is something undeniably magical about approaching a town on foot. You are invariably greeted by a host of intense, deeply conflicting emotions: elation (over the fact that you won’t be sleeping under a rock tonight), exhaustion (because you haven’t exercised this much in many years), hunger (because that pack is heavy and bread and cheese and sparkling wine only go so far) and, above all, wonder (at just how beautiful and poetic it can be to watch a town towering on the horizon grow closer and closer until the road between you and it has disappeared entirely).

The Incredible Portland Karaoke Scene

“Here’s the important thing to remember about Portland. No one’s here to get rich. Unlike everywhere else in America. There’s a critical mass here of people here following their passions.”

The quote above is from one of the best pieces of journalism I’ve read this month; it is Dan Kois’s story on the karaoke scene in Portland, Oregon. I’ve only been to karaoke maybe five or six times in my life, but I love the city of Portland, and Dan’s experience resonated with me.

In the piece, Kois profiles John Brophy, who runs  Baby Ketten Karaoke in Portland and every week:

adds as many as 20 tracks to the Baby Ketten songbook. Some of these are songs he purchases from karaoke studios, not unlike any karaoke jockey, or K.J., in America. But many of them are songs hand-assembled by Brophy, much as he’s doing with “Electioneering” — B.K.K. originals that Brophy constructs either because the studios that recorded “official” karaoke versions did bad jobs, or because the song is such an obscurity that no studio has ever recorded a karaoke version. For example, if you’d like to sing Bikini Kill’s “Rebel Girl,” the Gregory Brothers’ “Bed Intruder Song” (with full Auto-Tune), Danger Doom’s “Sofa King” or Neutral Milk Hotel’s “In the Aeroplane Over the Sea,” Baby Ketten has them all. (I know: I saw people sing them.) Your local karaoke bar doesn’t.

There are just so many things to learn from this article, such as the popularity of “Prisencolinensinainciusol,” a 1972 epic written in gibberish by the Italian performer Adriano Celentano, supposedly to mimic how English sounds to the Italian ear. The lyrics are pure gibberish, and the original music video is below:

This paragraph was excellent, but you have to watch the video clip below to fully appreciate it:

A tall young man in a puffy jacket swayed up onto the stage, then kicked into the lyrics — but instead of imitating Jack White’s rock ’n’ roll keen, he sang in a rhythm-and-blues croon. The song was instantly transformed from dirty garage rock to bedroom soul. It sounded incredible, as if the song were written that way in the first place. When it was over, Justin bowed, accepting our applause, then replaced the microphone in its stand and walked out the door, never to return.

Dan Kois with a beautiful conclusion on the city of Portland:

Portland isn’t just the capital of karaoke, I was realizing. The Japanese influence, the small-business climate and the abundance of bands don’t really matter. Portland is the capital of America’s small ponds. It’s a city devoted to chasing that feeling — the feeling of doing something you love, just for a moment, and being recognized for it, no matter how obscure or unnecessary or ludicrous it might seem to the straight world. It is the capital of taking frivolity seriously, of being silly as if it’s your job.

I’ll be back in Portland in July 2013 for the annual World Domination Summit (here are some readings to get you familiar; here is my summary from Cal Newport, who spoke at WDS 2012). I am going to spend a few days outside the conference doing touristy things, and certainly on my list of things to do this year will be to check out the karaoke scene in Portland. Who’s with me?

James Lasdun on Being Stalked

“I Will Ruin Him” is a haunting story by James Lasdun, who found himself a victim of stalking by a former M.F.A. student of his:

It’s one thing to be abused in private: You experience it almost as an internal event, not so different from listening to the more punitive voices in your own head. But to have other people brought into the drama is another matter. It confers a different order of reality on the abuse: fuller and more objective. This strange, awful thing really is happening to you, and people are witnessing it.

Along with the accusations of theft, Janice had also received details of my supposed (but equally fictitious) affairs with Nasreen’s former classmates, complete with descriptions of various kinky sexual practices that Nasreen claimed to have heard I went in for. (She had an uncanny way with that transparent yet curiously effective device of rumor, the unattributed source: “I’m told he …” “I hear he …” “Everyone knows he ….”)

The abrupt ending, though? It’s because the essay is a prelude to Lasdun’s new book Give Me Everything You Have: On Being Stalked.

Eric Schmidt’s Daughter on North Korea

Google Executive Chairman Eric Schmidt’s daughter Sophie has posted a lengthy account with photos of their recent trip to North Korea. Some highlights from a post titled “It might not get weirder than this”:

  • The English-language customs form for North Korea requires declaration of “killing device” and “publishings of all kinds.”
  • None of the buildings visited by the delegation was heated, despite the cold. Sophie writes: “They’re proudly showing you their latest technology or best library, and you can see your breath. A clue to how much is really in their control.”
  • The delegation had two official minders always present with them (“2, so one can mind the other”) and no interaction with North Koreans not vetted by officials.
  • Eric Schmidt’s “reaction to staying in a bugged luxury socialist guesthouse was to simply leave his door open.”
  • The group could make international calls on rented cell phones but had no data service.

This was my favorite highlight from her trip:

Probably 90 desks in the room, all manned, with an identical scene one floor up.

One problem: No one was actually doing anything. A few scrolled or clicked, but the rest just stared. More disturbing: when our group walked in–a noisy bunch, with media in tow–not one of them looked up from their desks. Not a head turn, no eye contact, no reaction to stimuli. They might as well have been figurines.

Of all the stops we made, the e-Potemkin Village was among the more unsettling. We knew nothing about what we were seeing, even as it was in front of us. Were they really students? Did our handlers honestly think we bought it? Did they even care? Photo op and tour completed, maybe they dismantled the whole set and went home.

Sophia’s takeaways:

  1. Go to North Korea if you can. It is very, very strange.
  2.  If it is January, disregard the above. It is very, very cold.
  3.  Nothing I’d read or heard beforehand really prepared me for what we saw.

Worth reading in entirety, especially for the photos. The only thing that sucks is the formatting of the post (google sites, what the heck?).

Tessa Hadley’s Short Story “Experience”

Tessa Hadley’s short story “Experience” is my fiction read of the week. It’s about a twenty-eight year old narrator, Laura, who moves into her “friend of a friend” Hana’s house while Hana moves away for a while. Rummaging through the attic one day, Laura discovers Hana’s diary. One day, Hana’s former lover, Julian, pays a visit and things escalate (but not in the way I expected):

I’d never have picked Julian out as a sensuous type if I hadn’t read Hana’s diary; he seemed too busy and prosaic, without the abstracted dreamy edges I’d always imagined in people who gave themselves over to their erotic lives. And yet, because of the secret things I knew about him, I was fixated on him the whole time I watched him cook, and then afterward, while we sat opposite each other eating at the little table he pulled up to my armchair. I told myself that, if he left without anything happening, then I had lost my chance and I would die. I wasn’t melting or longing for him to touch me or anything like that; the desire wasn’t in my body but wedged in my mind, persistent and burrowing. I didn’t even like Julian much. But liking people and even loving them seemed to me now like ways of keeping yourself safe, and I didn’t want to be safe. I wanted to cross the threshold and be initiated into real life. My innocence was a sign of something maimed or unfinished in me.

The ending is a bit anti-climactic, which is something I’ve come to expect from a lot of these fictional stories in The New Yorker.

How High School Stays with Us

Jennifer Sieger, in New York Magazine, pens a thought-provoking piece titled “Why You Never Truly Leave High School”:

Not everyone feels the sustained, melancholic presence of a high-school shadow self. There are some people who simply put in their four years, graduate, and that’s that. But for most of us adults, the adolescent years occupy a privileged place in our memories, which to some degree is even quantifiable: Give a grown adult a series of random prompts and cues, and odds are he or she will recall a disproportionate number of memories from adolescence. This phenomenon even has a name—the “reminiscence bump”—and it’s been found over and over in large population samples, with most studies suggesting that memories from the ages of 15 to 25 are most vividly retained. (Which perhaps explains Ralph Keyes’s observation in his 1976 classic, Is There Life After High School?: “Somehow those three or four years can in retrospect feel like 30.”)

 To most human beings, the significance of the adolescent years is pretty intuitive. Writers from Shakespeare to Salinger have done their most iconic work about them; and Hollywood, certainly, has long understood the operatic potential of proms, first dates, and the malfeasance of the cafeteria goon squad. “I feel like most of the stuff I draw on, even today, is based on stuff that happened back then,” says Paul Feig, the creator of Freaks and Geeks, which had about ten glorious minutes on NBC’s 1999–2000 lineup before the network canceled it. “Inside, I still feel like I’m 15 to 18 years old, and I feel like I still cope with losing control of the world around me in the same ways.” (By being funny, mainly.)

This was a key paragraph:

Maybe, perversely, we should be grateful that high school prepares us for this life. The isolation, the shame, the aggression from those years—all of it readies us to cope. But one also has to wonder whether high school is to blame; whether the worst of adult America looks like high school because it’s populated by people who went to high school in America. We’re recapitulating the ugly folkways of this institution, and reacting with the same reflexes, because that’s where we were trapped, and shaped, and misshaped, during some of our most vulnerable years.

Like the author, last year I attended my high school reunion. I didn’t know what to expect. But the biggest take-away from the event was this: of the people who showed up, many were still building a path, not certain where they’re headed. It felt incredibly reassuring to know that a lot of us haven’t figured out what we want to do with our lives, and that it’s okay to be in this company.
